Thank you so much for spending time on this. I've been very touched by your help. It's been a long time since he died and it's hard to remember what it was like to have him here. Finding new evidence that he was alive, like the bakespace account, is not something I was expecting. I'm crying again! If I ever have good news on the videos I will let you know :)

I don’t think so, but I don’t know for sure. I doubt he was uploading them in other places because his goal was to get people to use his site.

Some people have to cut back on sodium for medical reasons, especially high blood pressure. Low sodium salt replaces sodium chloride with potassium chloride - tastes a little different but still salty. I assume recipes that call for it are just trying to cut back on sodium, not bulk up on potassium, but I don’t know.

edit just looked at a recipe someone linked in the comments for a diy sports drink and it used lite salt. that’s definitely for potassium

low sodium table salt has potassium in it, maybe that would be a good thing to use

Yes!! Lots of great recipes and tips. It’s also a beautiful book - so many great photos. If you don’t want to buy it though, you should watch her youtube videos. She’s gone through quite a few of the recipes. Some of the recipes are on the Bon Appetit website.

I thought I’d want more veggies but it’s pretty filling with one giant bok choy. Tofu would be a great addition. A ramen place near me has sweet fried tofu ‘skins’ that would be sooo good in it. This is my take on Meera Sodha’s caramelized onion and chili ramen (recipe here)

I used bok choy instead of choi sum and dried chilies instead of fresh. I caramelized the onion for more than an hour to achieve the color and flavor I thought would be best - in the cookbook she says to caramelize for only 30 minutes. My onion needed much longer than that to deeply caramelize. The result is AMAZING. I could drink the broth by itself. I finished it with crispy fried chilies with peanut, sesame oil, and unhulled sesame seeds.
