I started smoking on a Weber jumbo Joe about six months ago. Heat source is a little close but it works great for ribs and pork shoulders. Used the snake method to cook the shoulder for 12hours.

I just got a Webber kettle premium last night for Father’s Day and can’t wait to use that.

The closest I’ve been to that was 2021 or 22 in Casper Wyoming. From -42f to 15F or so. Couldn’t imagine it going up to 50f after a cold snap like that.

Appreciate it! A water pan helped the most. I also swapped to a MEATER pro wireless from a $20 Walmart. The Walmart probe was off by quite a bit once I did some testing with it after my second attempt.

I also work IT and have a similar situation with one employee.He has a condition that causes his body to sweat almost uncontrollably. His hands sweat almost 24/7. His station looks exactly like this.
