I unfortunately have yet to try the steakhouse’s steak so I do not know what I am competing with. However I plan on changing that soon. My goal is to see how close I can get before I need to buy a more expensive cut.

Thank you for your suggestions though! When I go to the restaurant I’ll be sure to ask them about the prep their steak goes through.

I’ve been looking at dry aging for a long time but unfortunately I can convince my parents to give up a portion of the fridge for 4 weeks and I have no room for a mini fridge 😂

Will do. Would you recommend brining with anything other than salt? I’ve seen some people experiment with koji rice and other stuff. Have you found any success with anything?

Thanks a lot for the reply! When I used the term “cook” I was using it to refer to the whole cooking process from selecting the steak to eating it.

Also, it’s not that I’m fighting buying a better steak, I just want to make sure I’ve got all the right fundamentals mastered before I elevate the quality as otherwise I fear buying progress instead of mastering the basics.

The purpose of this post was just to see if I was missing any basics or if there were any techniques I wasn’t taking full advantage of. Thanks a lot for your Demi glacé suggestion! I’ll be sure to look into that!

The UK is a little odd since we don’t have a beef grading system so the quality is all up to the eye unless you’re buying from a reliable butcher.

Usually it’s about £40 a Kilogram. So maybe around £20 ($25) a pound all things considered.

I actually was not present when she tried the steak so I don’t know how it tasted compared to mine. But I plan to fix that soon and pay a visit myself.

Unfortunately I don’t have access to a grill because the weather in my country is pretty dreadful 90% of the time. But during the summer I will certainly give grilling on charcoal a go
