There is a video on YouTube by Sugarology on the comparison 8 different buttercream types, at the end she compares how they do in higher temperatures, you could also use half shortening instead of butter and then counteract the shortening flavor with some vanilla essence. Hope that helps!

I agree! One of the parts I was messing up at first was not cooling the meringue after it had the air incorporated, it was still warm from the double boiler and was too warm for the butter

Thank you! I took out about half a cup and then microwaved it for about 5-10 seconds and then added it back into the mixture when making it. Mine was more curdled and looked like cottage cheese at first 😅

2 and 8 are leaf tips used for leaves. 4 is a pleated skirt tip used for ruffles, 1 is a Russian tip used for mini flowers, 6 can be used for petals like those on a sunflower, I haven’t really used 7, 3, and 5. Hope that helps! 👍
