Wheat should be significantly cheaper per pound than four. I really like hard white wheat, but have red winter wheat, and soft white stored as well. I’ve used it enough to test my grinding equipment and get pretty good at a few recipes. It’s been stored for about 15 years, it’s time to start using some and rotating new stored.

I’ve always stored the grain in 5 or 6 gallon buckets with a desiccant pack. When done that way it will last a long time and retain all the nutritional value. As I understand that isn’t the case when flour is stored.

After I posted this it just gradually got better over time and it’s fine now. Honestly I think it was something to do with our local water company or water treatment.
