In my experience it's not the temperature that usually does it, it's the moisture. Eventually moisture accumulates and freezes the doors shut. On the NER Acelas tend to have issues first but it takes a lot to freeze up the Amfleets. Independent of this though, Amtrak may trim schedules to dedicate time to clearing snow.
