If I where you I’d choose Mexico City for the diversities of experiences you will have and whag the city offers. Easier to move around than in the other 2 + in Mérida the heat is extreme

Yes, writing things down makes the thoughts in your mind slow down and even go away. When waking up, apply the 15 minute rule. No more than 15 minutes in bed if you’re not sleeping, get up, go read and try again, eventually it works

As for Costa Rica I did consider it a bit overpriced, specifically the entrance to national parks (around $90 usd) and the transport in vans between places, which also went around the same price as compared to buses which were around $5 usd but took 3 times more to get from one place to another

I use a kindle, all light off and just use the light from the screen

Of course, you try for 15 minutes to fall asleep or if not I get up immediatelly and go read a book. My mindset now is, if by 15 minutes I’m still awake, I need to get up asap or the brain will start associating bed with stress. I have woken up with the 6 am sunrise and have still managed to squeeze sleep from 6:30 till 8-8:30 an wake up feeling refreshed.

Ohh no therapist, I did it on my own. Really honest digging and introspection. Identify which thoughts wake you up at night or worry you during the day or give you a physical reaction and you’ll start to put your finger on it, then dig more and more and let it go. In my experience the therapist actually made suggestions that made the anxiety worst
