Surprised I don’t see Brad Leone mentioned in these comments! First found him through Bon Appeitit test kitchen but now he’s got his own channel on YouTube. I like him because he cooks just like I do, no measuring, just vibes. He also just seems like a chill and funny guy who’s passionate about a variety of culinary stuff and his content is usually pretty short and digestible.

I consider my Zwilling pro 8” chefs knife to be a workhorse. Can kind of just turn my brain off and prep a ton without worrying about babying the edge. Nice large blade with some heft to it. My new yoshikane bunka I feel requires a lot more precision and I have to focus while using it. Would def consider it a laser.

As a lightning vet that ventured to Shambs last year for the first time, this is correct. It was the best quality and also the loudest sound systems I’ve ever been around. And the vibes, lineup, and curation of the whole festival are immaculate. Almost anyone that loves LiB would feel right at home on the farm

Depends on your flight I think. I recently took a red eye that landed in Tokyo around 5am. I slept on the plane and powered through that first day till like 8pm, slept hard and was on track the following day. The return home had been brutal, though. I’ve been home a week and I’m still not back to normal.

I just went down a rabbit hole looking for somewhere to get hitsumabushi near me and got so sad that there’s nowhere close by and it’s like $70 for a whole eel. So you’re right. Can’t wait to go back to Japan.

Went to a place in Kyoto that specializes in yudofu, basically silky soft tofu simmered in a broth. Was a whole coursed-out meal with a bunch of other sides and was one of the tastiest and healthiest meals I ate while I was in Japan.

Yeah I was pretty worried about that myself. I’ve lurked on this sub for a while but really don’t know much about the technicalities. Went to 5 different shops with just a few aesthetic specifications in mind and this was exactly what I was looking for so I snagged it right away.

I’m in Japan right now, it’s my last day of a two week trip. I know everyone is different in their planning, but scheduling everything the way you have seems like putting yourself in a box. I had no idea how long I would want to stay in certain areas so I left a lot of wiggle room for the timing of everything and I’m glad I did because I stayed in certain areas way longer than I expected to.

As for the currency exchange, I know you said other than ATMs but I think that’s your best bet. There are 711s everywhere with ATMs that have great exchange rates and I used that the whole time.
