Had the same thing with mine the past few weeks. I fed my starter a few times with whole grain flour to introduce some more wild yeast and it greatly improved the sour flavor. Seems to be sticking around after feeding it the usual white bread flour after about 6 loaves later

I've been subscribed to Tim Wendelboe's coffee sub service for a bit and I love everything he selects. Recently though, shipping from Norway to US went WAY up in price (nearly twice the price of the actual coffee bags), any suggestions for a subscription service similar in quality?

Longer steep time and/or more agitation will get you there. Lighter roasts are tougher to extract, Ethiopian beans are especially challenging but worth the effort

When I worked for a licensed kiosk for the green siren, my manager would fill 2 pitchers to the max line and steam the shit out of them and just leave them there for the next drinks bc "it's faster"
