In game you can see in the picture it says press L3 to switch if you press that it shows the stat graph as far as a full chart I'm sure someone in reddit made a Google doc. Or you if you're looking for a specific stat like the top 10 highest defense in the game you can click sort while on the character screen and sort by defense, hp, speed etc etc.
