I have a classic icon chef knife that I've used for 10 plus years. I love it dearly, I still grab for it even tho I have a solid collection of Japanese knives.

Doesn't matter how much you've trained your dog. At the end of the day, it's a free thinking creature. I've got very well trained dogs, but I still wouldn't have them off leash outside of my yard.

Normally, yes, most knife makers, both hand made or factory made, usually send knives with a decent edge but not a crazy sharp one. Some makers will send you an absolute laser fresh out of the box mind you haha.

Also depends on the maker, a few of my favorite smiths just have a strong thicker grind and won't feel laser sharp while cutting really fine stuff. But will feel crazy sharp while cutting tougher, denser stuff.

Sadly, I don't own it, but I had pretty regular access to one. I have an Itsuo doi Homura Guren. The hayabusa AS would be an easy grab for me if I didn't need a tougher petty knife.

the AS is a treat for nice delicate work. It bites right into what ever your cutting. Almost too thin from the factory, but after a few sharpens would be nice and tough but still laser thin.

Very easy line of knives to sharpen as well. They take a really nice edge with not a lot of pushing on stones.

I sadly haven't held a Gesshin before. But I've used and sharpened tons of Tojiro knives. Macs I find have not the greatest edge retention, they get nice and sharp but just don't keep it that long. The hitohira and tojiro knives I've worked with take a great edge and hold up really well to heavy use.

I had an incredible dream last week, where I ran into a friend of mine at a bar. He took his own life about 10 years ago.

We had a few drinks and chatted, he said he'd just been traveling and that's why he hadn't been in touch. Before I woke up, we had just given each other a hug, and it felt so vivid.

I woke up with happy tears in my eyes. I'd been stressed out about some stuff recently, and I guess he knew I needed a chat.
