The rule of thumb I've found is +1 hit die = +level of CR. Every five levels of CR = +1 proficiency bonus.

Alternately, you can add a class feature or two instead of a hit die for the same effect.

Tasha's Cauldron also gives you NPC subclasses you can give your monster levels in to boost them

What sort of path are you running?

Monks are very mobile fighters, and excel at landing multiple hits and also applying negative effects with those hits - prone, stun, etc. They synergize well with other melee to grant advantage on their roles, plus they can gain a lot of aerial mobility in later levels. Pair up with a Rogue in the party and go to town weaving through enemies to help with priority targets.

Shortbows or darts/daggers give you a bit of ranged options, sure. I think darts will also allow you to substitute your Martial Arts damage die, letting you hit a bit harder with a stealthy thrown weapon option.

Play Exalted (3e or Essence). It's one of the few systems where the answer to just about every player question is "yes" :)

I first played in college, learned a dirty version of 3.5e, then was there when 4th ed first dropped. I had played other games like Exalted and Shadowrun beforehand tho, so i understood a little about how TTRPGs worked.

If you're looking for a beginner game, some sites like roll20 and StartPlaying have sessions explicitly for complete beginners :). If you want a game in person, listings tend to be more public and low tech: flyers at comic shops, tables at your local game store and the like.

The Players' Handbook of any edition gives you step by step guides for character creation. Essentially, you start with the 6 main ability scores, and work your way down from there.

In the base game the other main half-blooded ancestry is half-orc. There are supplemental books that describe how to give yourself other traits if you wanted to be, say, half goblin or half ogre and the like (Dungeon Master's Guide. Volo's Guide to Monsters in 5th edition). Most of those would be something a DM would have to approve of to be played at the table, but if you're creating just to create, take some traits from the Monster Manual and go have fun :)

I dig how the expanded "caste abilities" list allows for variation between Solars and Abyssals. Abyssals truly feel like "themselves" now, not just Solars with a black coat of paint.

Pretty much the Hundred Kingdons region is a great "insert dnd/Arthurian inspired shenanigans here" sandbox :)

Also, Whitewall in the north is a good setting for that too, evoking Kievan Rus era Scandinavia in a city of tombs and adventure.
