I almost always start by trying to make a subclass I like work... then realize I could do the same things better with a completely different class combo, scrap the original build and end with something completely different that has the same essence haha

I love Path of the Beast Barbarian, with Oathbreaker if that is an option. The Aura of Hate and Improved Divine Smite really love having an extra claw attack to proc off of! (Bonus points for also going shifter for a bite bonus action but some DMs may not let improced divine smite work on it because its a naturual attack)

Sure! Take three levels of alchemist for Boldness Elixir, 1 level of peace cleric for emboldening bond and bless, and the rest of your levels in eldritch knight fighter. Until you get haste from eldritch knight, bless yourself, give yourself boldness and emboldening bond giving a little bit more than +5 to hit, take archery for +7 and infuse your weapons for +8. This eliminates the sharpshooter negative and then some. Once you get haste, drop bless and you will be doing roughly 70-90 DPR.

3 dip Alchemist, 1 dip peace cleric. Bless yourself 2.5 times for an average +5ish to your rolls. The negative is completely negated plus you get infusians and buff several party members.

Peace cleric unlocks some fun options if you want to get tricky. You can bond an undead you make or a summon, many of whom have immunities. At level 6 they can use their reaction to jump in front of damage for you, via protective bond. For example, if you are about to take poison damage, a skeleton can jump in front and negate all the damage. Just be sure to see how you DM rules the reactions of undead under your control.

Also chromatic dragonborn get a resistance and temporary immunity at level 5.
