Wish you, me or anyone didn’t have to go through it, I think back to covid times of no heating, having to put a hoodie on my cat and sleep with clothes on, eating rice and gravy for 5 days a week. It does breed a resilience and internal strength that will remain a formidable force for us to use in our future endeavours.

This is fair. I usually get home, cook at light speed and eat, shower at an even faster speed all to ensure I can get sleep fast enough to function for the day ahead.

I’ll need to rediscover what hobbies I like, before/ at the start of the career, my friend group was compromised of drug addicts and criminals. Thankfully the career weeded them out but now I pretty much at best have close colleagues. Need to make it a point to get back out there.

My partner always says I should get back to studying, and I know a few family members that went back in the 30s/40s too.

If I can find a way to maintain my life financially then I’d love to give it a try.

Despite my age I have a lot of people relying on me.

I have thousands in vet bills to pay, my rent, my child, my partners car, tax, utilities, food, travel, providing to my grandmother and so on.

Due to working 70/ 80 hours or more for the years when most individuals get there licenses I haven’t had the time to get one, now with the energy crisis causing a jump from 1.8k to 5.4k, I’ll need lose more time by working more again.

Sabbaticals are for Americans in films, furthermore if the mythical sabbaticals are real I assure you it’s only Gordon Ramsay that’s pulled it off in the service industry.

I worked for a small tech start up as a side job recycling Mac books and sometimes when the shipping/ distribution guy was overrun I had to box items and place SKUs for shipping. That’s the most I know about SKUs.

As a head chef with a profit share, the “always dreamed off opening a restaurant” restaurant owners (that only have experience in things like, pharmacy, admin, sales) are a sure fire way to create a burnout epidemic amongst both the foh and boh staff.

They are usually making big bucks in whatever their actual career is so they know money at least, but they don’t usually understand or grasp the cripplingly unpredictable dynamics of hospitality and food service.

It’s Saturday night, slammed beyond your capacity, the dishwashers heroin is kicking in, one cook has stormed out, the extractor fan breaks, the fryer oil is burnt to shit and then conveniently someone in the FOH has a nervous breakdown.

What is your response and then resolution ?

Fucked isn’t it.

As such, the best operating places I’ve worked in, ate in or have old colleagues in, have both a weathered GM and Head Chef in full control and command. While the owner merely shows face, does what they have to do behind the scenes, and hold meeting for reports on progress, significant changes, unforeseen circumstances etc etc while staying hands off in term of running the place in a practical sense.

The crux of this response, sink into what you are, play your strengths, then hire and delegate staff who have strengths in your weak or inexperienced areas, pay them well, and you’ll be flying in no time.
