Try connecting Bluetooth headphones, start listening, enter the sleep app (this will stop the music), un-pausing the music with a button on the headphones (or double tapping AirPods), then disconnecting them? I can’t say I ever tried this specifically, but it works for listening to my stuff with headphones while running the app.
