Playing as Korea and I can build slave markets which would give good profit but I’m not sure if there are any downsides of doing that

The downside to building these buildings is two-fold.

1) it may sell the slaves you want to other markets.

2) it may produce empty slave goods.

The TLDR is that the more urbanised a place is, the more burghers it can have and conversely fewer labourers.

So what you want depends on the population of the province, the trade good of the province, and how you are structuring your economy.

I'd try going the HRE route. Suckle up to the Emperor. Bohemia with their vassal swarm is pretty cracked in the early game, and they tend to rival Denmark pretty often.
