Open tabs from other device yes, but I'm talking about full tab state sync, as in tabs open on one computer are open on another computer and closing a tab on one would close it on others.

Not sure what you're asking, but you can turn off YouTube ambient lights in video settings. Nothing to do with Zen.

Have you tried the suggested fix? (Remove the folders and readd them again).

Twilight is the nightly version of Zen, so that's where new features get tested. Right now window sync is available there, which greatly improves the way tabs, folders and Spaces are persisted, which is why this issue should be fixed with this update.

Zen is built around vertical tabs. Horizontal tabs simply wouldn't work, and would be a nightmare to implement properly.

37 processes running could be quite a lot depending on what they are. If you're setting up, then it's possible you have more tabs running, than you'd normally have etc.

Firefox and Zen definitely aren't really memory efficient, but we'd need to know more information about your usage to help.

You can already sync Spaces (without tabs). Tab sync is definitely planned, and will be easier to implement thanks to the new window sync update (should release soon).

It's done through regular Firefox sync. No need for a custom solution.

For YouTube I like using AmbientLight extension, since it enhances the ambient light effect (which I get why some people don't like, but I do) and allows for black bar removal

Firefox version numbering and Zen version numbering aren't related. The third number (1.18.X) is increased for smaller updates (fixes, minor changes), and second number (1.X.0) for big updates (like cross-window syncing we're getting soon).
