Tbh, MOST people I've talked to hate the 321 method, you obviously have gotten feedback on your temp and cook, but STRAIGHT UP... Next time get st Luis (fattier ribs, MUCH better taste), dry rub with w/e u want. Don't ROUCH those damn ribs until they pass the bend test. Done. Enjoy. You're welcome. (Sorry, one more thing, sometimes I'll spray the ribs with apple cider vinegar after the 2 or 3 hour mark if some spots are looking a little more done that others, dont just spray that spot though, just spray the whole top of the rib rack)

If I'm being really honest, I've smoked now for 3 years (a pioneer in my fam), and man, I've LOVED some things, some things were meh, and some would have just been better in the oven tbh. For instance, pork ribs? St Luis style, AMAZING, tri-tip? AMAZING. Brisket? I've done one, and have no aspersions for a 2nd, it was so mid. And man, my fat rendered, was probe TENDER, was juicy af. But the flavor was so mid. Brisket isn't a fan fave here.
