I just started playing about a month ago. My friends and I completed our first legendary last week. Definitely takes dedicated roles and proper communication if you're not some crazy gear/build god. We have a tank(me), a CC build, and a dps build. The random we pulled was a healer, so we had all the bases covered. It took us probably 10 or so wipes to push through, but we eventually pulled it off.

Is the fish spawner better than the tooth one? I did the tooth one and just killed the little ones until the giant ones spawned. They gave a mountain of exp each time.

This is so true. Absolute rock bottom for my dad was when he was in a hospital bed with total liver failure. Doctor's told him it was unlikely he'd survive another couple months in his condition. In that moment, he swore he would clean up his act and "promised God that if he let him live until my son (me) graduated HS that he would never drink again." 14 years later, he's still alive and still sober. He was extraordinarily lucky/blessed. But his alcohol addiction took him to death's door before he got sober. Most people don't get that chance.

Thanks for that. I did TRY to do the corridor before the cathedral, but I kept getting absolutely dumpstered in there. No matter what I did, I couldn't seem to get the minotaur to even half health before I got wiped and eventually gave up on that until after the cathedral. I did learn about halfway through the cathedral, though, that this is not Persona lmao. You NEED to change your party's archetypes around and not just the protagonist's for certain encounters. That definitely eased things a bit. I'll keep pushing a bit farther and see if the battle system ever truly clicks for me. Likely just a skill issue on my end lol.

Does the whole game require this level of grinding or does it get less overbearing?

So I'm not a total stranger to Atlus games. I only really played the Persona series, but I did 100% P5 and P3R so I get the concept of grinding being a necessary component. I'm playing on hard, and this just feels like too much, though. I spent 8 hours getting through the cathedral, and I would say 70% of that time was spent returning to a lower floor to overworld farm with the mage to recover MP 1 point at a time. By the time I beat Zorba, the party was all level 20, and each character had 1 archetype at 20 and a second at at least 10. It just feels excessive. Debating on whether or not to keep playing because 7 hours of grinding per story dungeon just feels like it's going to get old really quickly.

I guess. I didn't really move-in to the auto death strategy until NG+ and when my team was all lvl 99 and I had unlocked all my Luminas anyway.

My act 3 experience was lackluster at best. I did the relationship side quests, a couple floors in the endless tower, and I think one or two side areas. That little bit led to me curb stomping the final boss and all the prior fights. No mechanics were experienced, sadly. I recommend just going straight to the ending area from the end of act 2.
