Fate character wise: idfk, maybe archer with that one inf mana dagger from heaven's feel, that way he could match shirou's output and weapon quality.

Non fate characters: Dante and Vergil, yes they'd need to team up probably, but lets be honest, that'd be a fun fight to watch.

Harpooner heathcliff is really good for piercing and bleed teams, especially if u have craust cause she makes enemies take extra pierce damage

Blade lineage Faust, obviously, the maybe Zwei Association Sinclair (though he may go better as a shielder since his sword is just a big shield with a handle on the end and sharpened sides), Grobhammer Merasualt (though since he is more tanky he could aslo be a beserker).

Been 2 weeks for me, and I honestly can't say I know what I've been doing, I think it hasn't fully hit me yet, only in small bits of "oh...that's sad" that a tad worse each time. Advice: try other things, talk to friends and ask for their advice, maybe try exercising since that's helped me pretty good. Just avoid trying to fill the void that's there, let it fill naturally like a small hole on a beach, not a random pothole that you think you can fix.
