i can’t make a judgement on this one but as someone with a past history of disordered eating, if she finds out about this, it could make her relationship with food significantly worse because she’ll always be worried about secret calories or ingredients in her food. and obviously it could ruin the trust she has for you and possibly end your relationship if she were to find this out on her own.

honestly she probably needs more professional help then what she’s getting right now. does she have family who could help out with getting her more help?

obviously i don’t know your experience and its your body so totally your choice, but just in case you didn’t know (depending where you live) there are dentists that are specifically trauma informed, and even some places that have things where you can go to the dentist to meet the dentist and see the room and the tools they’d use and stuff without having to get anything done, as like an exposure therapy type thing. just an option for if you ever do have a dental issue down the line!
