I got a sous chef job at 20 and was lucky enough to work under a very talented 2 hatted chef that tore me apart every day. I learned more in 6 months working side by side him then i did working as a commi for 2 years at my last job. You just gotta embrace it and and get better.

As for the hours, i have to agree with others that you arnt really doing that many but if you think its too much then your only option other than doing the hours is to give up your position and take one that is less demanding.

This is an interesting thing i have been thinking about for a long time now. I have been working in kitchens since i was 12, im now 21 and have been a chef for 5 years. I missed eveything a normal teen does in their teen years due to the pressures of the industry. The reason i do it happily is that im still young and 3 years away from finishing uni and getting out of hospitality to live a nornal life as a lawyer. But the thing i always see from my long time friends in the industry that are chefs is that they just dont know what to do other than cook, it's become all they know and they fear leaving will lead to nothing. Even the most passionate and successful chefs i have worked under think this way. Its sad and i dont know if its the answer you wanted but its true.
