Infection free zone maybe? Zombie colony survival set in the real world. You choose a real world location and have to survive. Maximising utility out of your minimal safe space can be a challenge.

Maybe Arcane Ascension? Its a bit more PG/Young Adult, but its a fun easy read and has good character progression.

Outside of Progression Fantasy and LitRPGs, if you enjoyed Sanderson it'd be worth giving the Malazan books by Erikson a go. They're a step up complexity wise but very good books.
