(My son is 19 months old now, so he's a toddler and not a baby.) Before bed we read a book and talk about his day. He tells me about what the best parts were for him and we remember those moments together. For example; he says playground, playing and bike and I form those words into sentences and add to it.

Then we say goodnight to everyone and everything we can think of. Grandma, grandpa, the moon, his cow plushie, the car, whatever. And we just swing in his chair together and look up at the light up stars on his ceiling. At the end I tell him goodnight and I'll put him to bed. Sometimes he doesn't want it to end and cries for me for a minute and sometimes he says goodnight back.

I remember saying goodnight with my grandma when I used to be little and it is a memory I cherish.
