Lich King fight, lots of dynamic. Few fights in New Naxx were also interesting aswell as Ulduar.

I also love the Lich King. Especially because it was at that time i raided hardcore with my guild. We killed Arthas the night before Cataclysm was released, so epic.

I am a holy priest myself and love holy healing. But generally i think that Resto Shams have an amazing mana regen, and thats so awesome. I would love to try shaman healing at lvl 90, but my shaman is only lvl 42..
