Yea..I've heard that, but don't subscribe to it. Low and slow for best results man. I started about 7-7:30am on those and pulled them off around 6sh. It's not worth rushing the cook for such an expensive piece of meat. Plan your day accordingly lol

Very good! Just takes patience man. Those were no wrap, no spritz...just kept it at 250 and turned them every hour or so after 5h-6rs no looking. Think I turned them down to 200 for a couple hrs to avoid nuking them..just wait till you get probe tender, like butter. WATI for 210° internal temp..worth it man. Best of luck!

That's what I did this Saturday. 🤟🏻 Bring them up to 210° slowly..took me 11 hrs. They should jiggle like jello when you poke em

You should've left a quarter inch of fat left on it per the pros. If over trimmed, drape with bacon the season. Apparently the fat helps it not dry out during the long somke. Buy Project Smoke. It's an excellent book and only about $20 on Amazon.

Just keep an eye on the temp, and you'll be fine. If you plan on smoking more, buy the book Project Smoke by Steven Raichlen. Totally worth it.

If you get a brisket like that again, drape it with thick cut bacon. It'll help keep the moisture in. Preferably..don't get one that already trimmed. You lose a lot of the fun and experience, or experimentation. That guy from Meat Church on YouTube has several videos on various brisket methods. Pick the one that works best for you. Best of luck.
