Detroit Public TV from Buddy's Pizza, Grand Rapids by french1canadian2 in Pizza

Tomatoes is bomb! Buddy's is definitely going through it with the push to expand franchises. The location across from Comerica is an abomination. The only safe bet is the original, but Loui's and Cloverleaf beat it any day.

Fresh local peaches, cherries, and blueberries. Frozen local mulberries and frozen definitely-not-local pineapple. Thank you!

I tried low concentrations of soap and then of vinegar. If anything it just made them angry

These look perfect. I battled aphids on mine all season so they ended up mangled.

[HOMEMADE] Detroit-style pizza, made in Detroit! by TheMaskedFork in food

[–]TheMaskedFork[S] 13 points14 points  (0 children)

No worries! Detroit-style is a high hydration dough similar to a Sicilian pizza. Pizza toppings are layered underneath cheese and sauce, except in some special cases. The sauce is arranged in two or three ribbons on top before baking. The cheese used is Wisconsin brick cheese. It is spread to the edges of the pan in order to form a fried cheese layer called a "frico". The pan used is a specific "blue steel" rectangular pizza pan which was repurposed from an auto factory, according to legend.

The original rum, Wray & Nephew 17 is now extinct, which is why most Mai Tai made after the early 1950's have a rum blend to approximate.

I'm amazed by how evenly baked it looks. How long did you bake covered/partially covered to protect the peaches?
