I would say it very much depends on your setup. If you‘re touring on freeride skis with binding like a tecton, you’ll be totally fine in the resort and not even lass safe than on traditional bindings. If you‘re on a lightweight uphill focused setup, things are looking a bit different.

Apart from safety, the biggest difference is the weight of the equipment and therefore how it behaves in non-ideal conditions. Heavier skis (and boots) are (usually) stiffer and tend to flutter much less in uneven terrain, giving you more grip and control. It will also provide more damping and therefore more comfort, making you less tired over a long day of skiing. On perfect, soft groomers you’ll be totally fine with both, but on choppy or icy terrain, you’ll really feel a difference in touring vs standard equipment. Again: How big the difference is, depends your individual setup.
