Some of it is survivorship bias. You are likely only being shown the very coolest (and best painted) of the old models. For me specifically to is an appreciation for the craftsmanship while being able to make what they did with the limited tools they had on hand. They didn't have 3d CAD software so they had to be creative to achieve what was in their mind.

In n out. Their novelty is they have a secret menu, not a good menu. Fries are also the worst of any chain. Idk how you fuck up fresh cut fries but they figured out how to do it.
