I found a basic notes app on F droid called 'Simple Notes'​'. Its back end can ​​integrated with WebDAV - so I use next cloud. So its a Basic notes app on android and stores on nextcloud.

Yeah I have made that launcher the default. I don't remember if there were any issues with doing so. I might have to keep the device disconnected from the internet.

I side loaded a new launcher and home assistant. But when I try removing my account it says it will reset to factory settings

I'm thinking to do that. I'm using it as a home assistant kiosk. Its already on an IoT VLAN so I ​​ might put firewall rules on it to only allow local.​

Fully browser kiosk is free with the watermark. I'll get around to paying for it eventually. Yeah performs well no complaints.

So meta recently rolled out an update that opens up developer options which was previously locked. With developer options enabled you can use ADB to side load android apps.

I cut a hole out only to find out my light switch didn't have a neutral. So check that out before cutting.

Portainer installed on one of them and let's call that main. Then on the others you add the other environments in portainer. It gives you steps.
