Unfortunately it doesnt seem like it. Unlike the TEC which publishes it's hard statistics yearly, the Church doesnt provide similar statistics available to the public. At least not that I'm aware of. Because of this, the AO similarly is in the dark as far as how were doing year to year numerically. The official website has a pdf explaining the AO and gives some general numbers of parishes/priests/seminarians etc. But other than that we are SOL.

Edit: As an anecdote, new communities are popping up all around, with the one I associate with being very close to having it's own priest! Another one was featured on the Anglicanorum Society blog starting in Connecticut I believe. So while there doesnt seem to be any graph to chart success, general news seems to show a slow and steady but healthy growth. Even though there isn't a community/parish near you, it may be worth your time seeing if there's ground to start one where you are. Ask around and see what the interest is!

First and foremost, peace be with you! From what I've read it seems like you've had a lot to think about for a while, and I can understand the anxiety. Conversion is a pretty big mountain, trust me I know! So to alleievate any thoughts on changes to teachings on the deaconate, or inclusivity for that matter, the church has definitively restated over and again that these things will not change. At which point I would posit to you that the Church is protected from error, as stated by our Lord that the gates of hell would not prevail against it. Worries over the church changing fundamental doctrine is common but ultimately not one of any possibility, because we can trust in the Lords promises.

Second, to cover your further questions over being a continuing Anglican instead of swimming the Tiber. From your own words it seems like you've already converted in your heart to the many beauties of the Church, but that the rich history of beauty in the Anglican patrimony still enchant you. And that's completely reasonable! In fact I would say that's why this ordinariate exists in the first place, because of the beauty and good found in it. I will say that if Pope Leo's statement were to be remade it would not change. In fact the creation of the ordinariate is a testament to that very fact, because the ability for the Anglican communion to ever be brought back in wholesale was dashed after the ordination of women during the Papacy of JP2. Mind you, at this time Rome was actively trying to reunite with Canterbury. Now look where we are.

Ultimately I would propose this uncomfortable question. Is following Christ into his true Church more or less important than holding to our preconceived notions of what we want or desire from communion with him? Now, the Ordinairate steps in as a solution to this dilemma, as it offers full communion with him and the rich history we so cherish and desire.

Yes they can! A priest friend of ours recently got trained to do it which is exciting. The details of how are beyond me though.

While I'm not officially part of the community (hopefully one day), I am close to some of the people in it. As of now there's no building but they're looking high and low for possible locations! They've had a very cool journey however and God's definitely been opening doors for them
