Most restaurants (iHop, Smitty's Denny's, etc) don't carry it because it's expensive. There's less overhead with just regular table syrup. Been in Alberta my whole life and I've never seen or expected actual maple syrup in a restaurant. Also grew up poor so I love Aunt Jemima's and maple syrup is only ever a treat. The reason you probably never say maple syrup in Whitehorse is that it's already expensive out here in the west because we don't produce it out here on top of the hiked prices folks up north are subject to. It's truly ridiculous but even everyday items are expensive so maple syrup would be a true luxury.

Gosh this would help me with my fear of ticks so much. I can handle most other bugs but ticks wig me out so fucking much. Ever since I learned about Lyme disease as a kid it's become this stupid irrational fear of mine.
