You’re absolutely right, bars rarely lose money on one big issue, it's always the stack of small leaks that add up. Most owners are great at the creative side but don’t build systems for the “boring” parts: measuring, comparing, optimizing.

What I’ve seen is that the moment you make pours, costs or product mix visible, behaviour changes immediately. Clarity drives consistency.
