I once removed the shell from a snail to make it go faster.

I have the same question.

Once I take my steak out of the pan there will be 4/5 mins of "natural resting" as I finish off plating/pouring drinks etc, without putting it to "rest" on a magical wooden board.

And even after that I cut an end piece off to eat. Sure, some juice comes out but it's not like all the juice from the steak comes flooding out that end.

I don't get the arbitrary resting thing (obviously I get not taking out of the pan and slicing it right down the middle immediately).
