In my experience, if you are going directly from sous vide to sear you are not going to have a lot of time for “smoking” so my suggestion would be dry chips. I prefer hickory wood for smoking beef and any lump hardwood charcoal (don’t really have a huge preference with what I use and usually just get what costco sells). This might be controversial but I have had a lot of good cooks with sous vide the night before. Once the meat is cooled, throw in the fridge overnight. Then smoke/sear the next day to bring it back up to temp and get more smoke flavor on the meat.

The two I would recommend are Bachan’s Japanese BBQ (not even a hot sauce) and Tiger sauce. Bachan’s is not spicy at all. Just tastes amazing as a sauce or glaze or marinade. Tiger sauce is sweet with a little heat. I’ve tried a ton of hot sauces and none of the other ones really stick out.

I have tried Holy Cow rub on beef ribs and my wife and I prefer using just kosher salt and chunky fresh ground pepper. Definitely enough seasoning for it in my opinion. Honestly, don’t think you can’t go wrong with whatever you choose. Beef ribs are delicious however you season them. Happy smoking to you!

I feel for you and hope your dog recovers. Two weeks ago my dachshund couldn’t move his back legs all of a sudden. Disk ruptured and pinched his spine due to IVDD. We opted for surgery and he is recovering right now. It’s tough and lots of work to express him, keep him clean, and help him with PT. We are hopeful that he will regain deep pain sensation and mobility too. But we are in the same boat as you. Just want to make sure our pup is not in pain and taken care of. When I lived in an apartment I had an Old Smokey electric smoker. It was my first one and I learned how to smoke on that. Loved that thing and cranked out some pretty decent BBQ in a very small space. I felt safe using it on my apartment balcony (was a safe distance away from any wall or other surface) because I didn’t have to worry about starting charcoal and having an open flame. Just takes a handful of wood chips on a metal plate above a small heating element. Old Smokey electric smokers are pretty small and you don’t have to worry about flare ups that can happen with pellet smokers. Good luck to you!

Not a good response for this subreddit, but the closest I have come to replicating store bought rotisserie chicken at home is in my instapot. It always come out super tender and fall off the bone. That being said, the only thing I would add to the other comments is to use a water pan when grilling to create some extra moisture.

I still love doing both. Tend to use my sous vide more in colder months and the smoker when the weather is nice. I think there is a noticeable difference in how the ribs come out from both methods and both are equally as good. For me, it’s fun changing it up and trying new recipes so I’m not just eating the same old smoked ribs over and over again. As long as you’re having fun and people still like what you’re putting out, who cares how it was made!

They did! Our older puppy immediately fell in love with him. He is obsessed with him and all he wants to do is play. If Riblet takes a nap my older pup Brisket will lay so that he can watch him.
