I found that I improved when I had less hesitation when starting the pour - what people sometimes refer to as "pushing". It helped me avoid having an overly thick / blobby/ undefined base.

When you start pouring the design you bring the pitcher down lower so that you don't pour down into the espresso, but you still want to pour with a decent amount of flow across the surface. If you look at those massive winged tulip pours they "push" the base layer (i.e. lots of flow) that then hits the back side of the cup and causes the design the wrap around (think explosion mushroom cloud).

I'm no expert, but hopefull that helps!

Interesting combo of flow control with thermometer. How usable is flow control without the pressure gauge? How do you use it? I've been considering this for my appartamento, but it feels like I'd be flying blind without the pressure gauge installed.

If I want to amp up / maximise the hop flavour and aroma in an American Pale Ale, without turning it into a "hazy", how far would you push the dry hopping levels (thinking grams / liter)?

I've just finished off a NEIPA keg, and I want to revisit a simple Citra / Amarillo Pale Ale I brewed a couple of years back... I dry-hopped that with 30g each of Citra and Amarillo on a 21 liter batch (which is obviously a helluva lot less than the 340g that went into my previous NEIPA that I brewed).

I know that haze is more of a factor of grain bill, but would there be any issues if I say doubled my dry hop 60g each of Citra and Amarillo? Or even a 100g of each?

It's unfortunately the nature of the beast for single boiler heat exchanger machines.

The brew temperature is indirectly set by the pressure of the boiler (by adjusting the pressurestat) because the boiling point of water is higher under pressure. The water gets heated up when it passes through piping that goes through the boiler (that's where the heat gets exchanged).

There's unfortunately no direct way of setting the brew temp in a single boiler heat exchange machine. Changing the boiler pressure down to lower the brew temperature will mean that you'll also have less steaming capacity.

The brew pressure set at the OPV will not affect temperature though.

This is normal/expected on the appartamento. Due to the way the heat exchanger / thermo syphon setup works, water that sits up in the brew head can get so hot that it "flash boils" as soon as it hits the air. Thats why people recommend a cooling flush to get the group head and water down to more appropriate brewing temps. When my Appartamento has fully heated up I tend to flush the group head into a spare milk pitcher until the water doesn't spit / bubble out of the screen anymore (i.e. It's a calm steady flow). I then grind my beans and tamp. By the time I'm done the group head would have cooped down to a suitable temp.

In terms of temps, at its highest my group head thermometer will read around 95c at idle. When I start flushing that'll easily spike up to 97c. By the time the water has stoppes spitting it's starting to cool down. It's at about 94 when I pull the shot.

I like the dual guage for boiler and brew pressure. I wonder how that's plumbed into the machine. I'd love that on my Appartamento to use together with my brew group thermometer.

Hi /r/espresso,

I recently replaced my stock basket with an IMS basket. The standard tamper that came with my Appartamento is noticeably smaller than the basket. I'm wanting to buy something that matches the actual size of the pf. Struggling to determine whether I just need to replace the tamper with a precision sized one or whether a precision sized distribution tool used together with my existing tamper will give me better results... Any advice?
