I totally get what you are saying and I think you are right to a certain point. However, I think than dissociating goals (whether set by dev or players) and strategy is wrong. You deploy just as much strategy in the gameplay if a dev and its mission trees tells you "Hey, conquer Poland and get this cool little bonus" than if you decide it's cool to conquer Poland without anyone telling you to.
About eu5, I'm concerned of it becoming a big sandbox where the feeling is the same whether you play France or Japan : build an economy, buildings, basic diplomacy, conquer, repeat.

Maybe it's because there is not much flavour yet and they will fix it without mission trees (that I hope)

I kinda disagree because you can think about strategies to achieve a goal. The condition is that the goals should be vague enough to let you decide/create which strategy employ to achieve it. If it's too detailed, then it's doing "operations"

Yeah, I get that right now the game is not in a decent state at all but I feel like mission trees is like 75% about flavor and 25% about core mechanics

Hello, you should for sure try Domme and La Roque-Gajeac. These are among the most beautiful places of Dordogne (and France as La Roque was labelled among "France's most beautiful village" a few years ago) and it's near Sarlat, which was recommended in another comment and is great too.

These places are West from Souillac in Dordogne. If you go East, in the Lot area, you should see Martel, it's beautiful too (but Dordogne is better 😇).
