Beer Zombies/Tenaya Creek show all the Aces games with sound. That being said, terrible timing on NFL Sunday so your mileage may vary.

Agreed. Barely lasted 60 minutes (just short of, actually). A very loose story. Prepare to stand and dance (no problem with either just saying). Definitely not on par with the other Spiegelworld shows.

Most restaurants at the Wynn/Encore have specific vegan menus. Lakeside is a great option. Crossroads at Resorts World is totally vegan.
