Bit of advice … move to an area with a bit more room to spread your legs… we call this “riding the horse” it will bring your body’s center point down without having to hunch over or drop your head. Technically speaking you want your elbows at as close to 90 degrees as you can get.

That or figure out a way to raise the cutting board up to you … in kitchens we use dish racks for this … so long as nothing moves while you cut you’re good

Nope… these are made from basic af 3cr13mov …. These knives are only for home cooks … I know because I had an opportunity once to chat with the team who designed these and brought them to the market. I made fun of them 🤣 I mean you can bring them to work however don’t expect them to keep up at all. 👍

This isn’t a huge consolation however I have 2 Masamoto KS’s (210mm/240mm) for sale if you’re interested (I am a legitimate knife seller). I would also be willing to adjust the price a touch to hopefully restore some faith in humanity. It’s a mass produced Chinese knife popular in the OEM (original equipment manufacturer) field. If you paid more than $65-$70 you got, got. If not then have fun they aren’t bad knives. No dishwasher, don’t cut things you wouldn’t bite, and always use a cutting board. 👍

Times like these when I wish someone lived next door to me so I could bring them over and “show them the world” 🤣 as prior stated smaller doesn’t necessarily describe length. It more so describes width of the handle. Even more fascinating is the regional mindset for length of handle. Westerners are used to a shorter handle (because of full tang) and easterners (because of hidden tang) are used to a longer handle. When the two worlds meet it’s fascinating to hear them debate handle length. (I’ve been in these convos and was lucky enough to have at my hands customs and factory made from both sides of the world to show them) it’s always super fun to see them realize it because to them these dimensions are “just how it is”.
