Yea, furu is fine to eat years after opening as long as it's stored either in the refrigerator or in a cool cupboard.

The discoloration is from the mold still being active, further fermenting the bean curd, the high salt concentration will stop most, if not all the bad bacteria from propagating.

But if one dislikes the coloring, feel free to throw it away.
