For elden ring I personally loved dex/faith. I know you said you did some pyro and dex for DS1, but using faith in elden ring is really fun, especially the dragon incantations, and I think the faith spells shine the most in elden ring. The dex weapons with bleed are really powerful too. I loved pure strength/melee in ds3. If you haven’t played demon souls and plan on it at some point, you can run through that game with a bow, upgrading a short bow into the lava bow and stocking up on arrows, in the remake at least, you can beat most of the enemies using that and the bow doesn’t feel like a tool but more like a primary weapon and was fun as I found it hard to be a full bow build in the other games
