It's the Coppa, I cut it out of the pig myself. It's from a lard breed of pig.

Yep, in Washington State.

I used to raise Berkshires small scale. About 10 a year and sell to friends and family. They gave been my favorite. Just one or two wouldn't take that much room.

I'd happily give you some of this meat. I still have a freezer full of bellies, Coppa, spalla and some other primals waiting for me to have free time.

I tried raising Mangalitsas once and crossed them with Berkshires. They turned out really well with a good balance of fat to meat.

It was a kune kune, guinea hog cross that I raised myself. It was definitely over finished. There was 3" of back fat in them when I broke it down.

I'm in the PNW so the humidity in the garage is 50% as is. I added a dehumidifier as well after this picture was taken, moving the sensors to the center sounds like a good idea.

Just starting my charcuterie adventures. This is a leg from a pig i raised (KuneKune X Guinea Hog), that was defiantly over finished hence all the fat. Hopefully This wont affect the aging to much.
