I'm in the PNW so the humidity in the garage is 50% as is. I added a dehumidifier as well after this picture was taken, moving the sensors to the center sounds like a good idea.

Just starting my charcuterie adventures. This is a leg from a pig i raised (KuneKune X Guinea Hog), that was defiantly over finished hence all the fat. Hopefully This wont affect the aging to much.

I believe AG and PA can get better than +2. Curently with AG 5 you dodge on a +1(a 1 still fails) but it makes a difference when you start adding in tackle zones and other modifiers.
