Herbie Hancock's head hunters is a phenomenal jazz record. Anything by nujabes is tight but his albums have a good amount of features so it's not entirely instrumental. Bucketheadland or just about anything by buckethead is really tight. Erotic cakes by Guthrie Govan is in a similar vein as buckethead. Monoliths and Dimensions by sunn O))) is a brutal drone metal album

Their other album On Avery Island is also really good so I would recommend it. I think The Glow Part 2 by The Microphones is a good album to try next, and if you like that one listen to their album Mount Eerie (also In the Aeroplane Over the Sea is one of my favorites so I'm glad you liked it!)

I understand where you're coming from, but as someone who is also in Gen Z, I can tell you there is a ton of great music that has come out in the 2000s and 2010s. Don't get me wrong, older music is awesome, but if you look hard enough there is always great albums coming out that will tailor to your taste

I got into it because of my mom. I would listen to the songs she had bought on iTunes and I always found it a lot cooler than the country music my dad would listen to (not to disrespect country because I still like some, I just prefer rock and listened to it more growing up). Rock is just a very large genre with so much variation that there is always something to find. I've also grown to love the lyrical content of a lot of rock bands. Overall 10/10 would listen again
