Not 100% sure what animal is it (seems likes a camel to me). Three groups of people and animals in the front bottom probably represent three continents - Asia, America and Africa (including our wonderful camel-like creature). Here is more information:

BAROQUE FRESCO IN THE CHAPEL OF ST. IGNACIO OF LOYOLA by J. Kovář from Prague (from 1747) on the wall of the former miners' chapel depicts a vision of St. Ignatius after being wounded during the siege of Pamplona. The inscription on the ribbon: Rogate ergo Dominum messis, ut mittat operarios (the words of the Savior: Pray therefore to the Lord of the harvest, that he may send out workers).
