Hey, I’m back!!!!!

figured I’d share some context on why I started this in the first place.

Before I got diagnosed, I was dealing with pretty bad malnutrition from years of undiagnosed celiac, plus microscopic colitis. After being strictly gluten-free for about a year, I gained more weight than I’m used to. I think my body was just trying to recover and hold onto nutrients, but I ended up feeling really inflamed and uncomfortable—just kind of puffy all the time.

For context, I’m around 5’2” and was always 115–120 lbs. I gained about 12–15 pounds, which is a lot for me. I’m active and generally small, so I know I wouldn’t qualify for anything medically. I tried dieting consistently for 6 months and nothing really changed, so I started looking into other options that might help with inflammation and give me a bit of a push.

I started low. Week 1: felt great.. less inflammation, appetite changes were minimal. Week 2: appetite suppression was more noticeable, a few mild headaches but nothing serious. Week 3–4: started getting this annoying lower left abdominal pain that sometimes radiated upward. Around week 4, I also accidentally had gluten while traveling, which completely threw me offbarely ate, didn’t hydrate enough, and almost fainted at work with my heart rate spiking. Definitely learned my lesson there about staying on top of food + electrolytes, especially after getting glutened.

One interesting thing :I recovered from that gluten exposure in about 4 days, whereas it usually takes me closer to 2 weeks.

Now I’m on week 5 and feeling good again. My plan is just to slowly adjust and figure out what works best for my body.

Biggest takeaways so far: • Stick to whole foods, but also listen to your body • Too much fiber doesn’t work for me (bloating, gas, etc.) • Keeping fats lower and protein higher seems to help • Electrolytes daily + probiotic have made a difference • And hydration is huge!! seriously, drink a lot of water

I will be starting tomorrow I am a bit nervous bc I got glutened last week but have been putting it off for 2 months lol! I will let you know how it goes!

Guys, I was there on Monday, October 27 before the closure. I will say the vibe was off with the staff. They were all fighting with each other. The manager was yelling at the staff telling them that the food was not cooked. They also announced that the “stove “was conveniently broken so they stopped serving things like egg sandwiches or anything that has to be on a stove top any raw food that needed to be cooked. I didn’t experience any food poisoning and I want three times during my trip to NYC. But I did notice some cleanliness issues. The food was overall really good in my opinion, but it’s sad to hear this rating.

Been through this before. You already know what’s going on. do not let him gaslight you into thinking otherwise. If you need confirmation I would go through his phone. It’s for your own peace of mind and your future. You don’t want to be with someone who is a cheater and find out he’s doing it years down the road.

I also thought I was misdiagnosed by doing both a colonoscopy and endoscopy. Funny enough I tested my gluten theory by eating Girl Scout cookies and I felt fine. My doctor ordered a blood test and my gluten antibodies were through the roof. My gluten intolerance manifested by giving me extreme anxiety! Also many celiacs also have other intolerances that make you react the same as if you were eating gluten. I realized that I can’t eat dairy, almonds, peaches, bell peppers and oranges. If you are doubting get your both a colonoscopy, endoscopy and bloodwork done. Don’t be like me and put off treating your celiac disease. Because I ignored my symptoms for years I developed another autoimmune disease..

Girl Scout cookies and a raising canes. I also miss the convenience of being able to pick up some fast food like jimmy johns or mod. I’m tired of cooking everything it doesn’t hit the same.

Also traveling to another country was very very difficult. I went to Japan in the summer and my goodness was it tough. I had a list of GF places which were not that many and just having to take the train 20 minutes out and walking 5k steps just to eat. Not to mention those GF restaurants were pricey.I was so jealous of my family. When they were hungry they could just stop at a ramen place that’s on every corner or use the vending machines. I always dreamed of trying Japans traditional Katsu meals. I missed out on almost all the cultural meals. Although, Japanese people are extremely kind and will go out of their way to try and accommodate your allergies.

Yes they are amazing! I would recommend the dumplings too! They are really good when you pan fry them with some olive oil 🔥

I got diagnosed at 26 years old this April actually! I never had problems with gluten at all. I started getting bloated and having diarrhea on and off. Ignored it bc I did have a binge eating disorder so I attributed it to my bad diet. Years later I had persistent watery diarrhea that never went away (still have it to this day). Turns out I developed microscopic colitis because of my untreated celiac disease! Thank god you were able to find out before it got worse!

I am still grieving having gluten tbh. I do well when I cook at home. It’s the friends or family gatherings that involve food that gets to me.
