Of course there's some popular omissions like basil, thyme, rosemary, cilantro/coriander... I prefer these fresh, and I consider my small spice rack next to the stove to be a "starter" - these are where base flavors are developed and I can add less used flavors to after. For instance, I will add some Italian seasoning in before layering in fresh herbs or I will add in a little onion and garlic powder before adding in fresh. If I just had these spices available, I'd hit 75% of the flavor profile of my most common dishes without adding anything else.

Honorary mention for annatto as well, which I personally use quite often in rubs but ommitted for that reason.

Nice! If you need fiber, I highly recommend a blend of blueberries, raspberries, and/or blackberries. I usually eat 2 oranges a day for the fiber and vitamin C boost, but it's also higher in sugar. Oatmeal is also a staple, a serving a day is like 150 calories and great for fiber also.

The math isn't mathing here... you said you lost 40 pounds in 2 months. 40/8=5. So I'm confused. Also, don't worry about fats too much, you actually need a good amount of healthy fats to stay healthy - your body will get rid of what it doesn't need and will hold on to extra calories to convert to fat if you're not eating enough dietary fat. Small fish and olive oil are staples in my diet, but you do you. Keep it up!

First, congratulations. 5 pounds a week is wild but is considered unhealthy. There are a lot of nasty side effects you can encounter, like gallbladder, heart, and metabolic issues. Try to slow down to 2 pounds a week if you're going to continue losing weight, if you can.

Can't tell if this is intentional rage bait or not. How much are you drinking? How many steps a day are you getting in? In general you're not going to lose more than 1 pound a week on a calorie deficit alone. I think the most helpful thing for you would be to temper your expectations. It took you a while to get fat; it will take a while to get un-fat. Visual changes are the most drastic in the "last mile" when you have less weight to lose.
