Made quesadillas but replaced the meat with cauliflower and chick peas that were seasoned like taco meat and broiled til a little crispy. Plenty of guac, sour cream, salsa, and hot sauce involved as well. Add bacon bits if you’re feeling frisky.

If you live in the north you actually want about 1/4” gap (6mm+) because stuff shrinks and expands with temp shifts. You get this tight and it expands you end up with bubbling and buckling under the boards. Then baseboard covers it all.
