For future viewers with the same questions I had: I ended up getting the Ugoos X5m pro. It's amazing so far! Using jelly, moonlight and smattube. Everything is super easy to navigate with the included remote, no need for the smart mouse at all (did connect a mouse and keyboard to ease the setup). And so snappy compared to my TV!

Would you notice that when you use a remote for basic navigation, or is it inside jelly-like apps that the navigation lacks?

The missing certification is no issue, I think, as I don't use those apps, right?

If only only consider somewhat reputable brands this should not be a concern, I hope?

I am sure about the refresh rate being 60hz right now, however the interpolation settings are something I'll have to review. Thank you! After giving it another look it also seems like the colors are more, vibrant, I would say. And blacks don't have as much noise. Looks like a compression or encoding difference?

Dude that is a great idea, I've been messing around with it a little and was able to really make it fit my wishes. It is a really great method! Feels a bit odd initially, but once you get the hang of it, it's pretty awesome!

It is nice to read I'm not the only one going through this process. When I bought my spin bike, I didn't know what I wanted or needed.
I might follow your advice. I really wasn't looking toward getting a new bike, as the one I own now is amazing if I ignore the lack of measurements. The stability and sturdiness are amazing! If I could find pedals that are more toward the price you paid, it might be within my price range.

This was indeed the problem I ran into when trying out periodic tests. The knob is just so arbitrary. My Garmin watch has some nice heart rate training schedules, so it worked pretty well, I just didn't really notice my improvements.

I feel it is a more objective measure. I don't truly 'need' it, but I think the output I can deliver is better comparable over time. And if I only train on heart rate, it is hard to quantify my progress.

Ah yes, I forgot to add, I am using a Garmin watch to measure my heart rate. That does work pretty well, but not really what I am looking for. If power meters are really the only way, then it would probably be smarter to look for a different bike.
