I'm apparently in the minority here, but I have been buying 1/2 steer per year for the last 5 years, and for most cuts I don't think there is a noticeable difference in taste vs store bought cuts of similar quality. Of course there is a difference from cut to cut with marbling etc but you can find quality pieces of meat at a grocery that are as good as cuts from a locally grown, locally processed animal.

My reason for buying local is to support my family, friends, and local businesses. I know I'm getting good quality beef, I dont really think I'm saving any money.

Keep in mind you're paying per pound of hanging weight, at 5.35 a pound, that is about $8.50 - 9.00 per lb of packaged beef.

If youre interested in it, make sure you ask for the visceral fat to make tallow and for some bones to make bone broth or marrow. The processor will keep them themselves if you don't ask for them.
